Ingredients
- 2 cups watermelon cubed
- 2 cups honeydew melon cubed
- 2 cups cantaloupe cubed
- 1 cup feta cheese crumbled
- 1-2 jalapeños thinly sliced
- 1/4 cup fresh cilantro chopped
- 1/4 cup lime juice about 2 limes
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large mixing bowl, combine the watermelon, honeydew, and cantaloupe cubes.
- Add the crumbled feta cheese, sliced jalapeños, and chopped cilantro to the bowl.
- In a small bowl, whisk together the lime juice, olive oil, chili powder, salt, and black pepper to make the dressing.
- Pour the dressing over the melon mixture and gently toss to combine, ensuring all the ingredients are evenly coated.
- Chill the salad in the refrigerator for at least 15 minutes before serving to allow the flavors to meld.
- Serve cold and enjoy!
