Ingredients
  

  • 4 large ripe bananas
  • 1/2 cup creamy peanut butter unsweetened
  • 2 tbsp coconut oil
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • Optional Chocolate Glaze:
  • 1/2 cup vegan chocolate chips
  • 2 tbsp coconut oil

Instructions
 

  • Peel and slice bananas, then freeze until solid.
  • Blend frozen bananas, peanut butter, coconut oil, maple syrup, and vanilla extract in a food processor until smooth.
  • Pour mixture into a lined baking dish, smoothing the top with a spatula.
  • Freeze for at least 4 hours or until firm.
  • For the optional chocolate glaze, melt vegan chocolate chips and coconut oil together, then drizzle over the frozen bars before the final freeze.
  • Cut into bars and serve immediately or store in the freezer in an airtight container.
