Prepare the Sweet Potato Fries: Preheat oven to 220°C (425°F).

Spread on a lined baking sheet and bake for 25-30 minutes, flipping halfway, until golden and crispy.
Make the Kohlrabi Patties: Grate the kohlrabi and squeeze out excess liquid using a clean towel.
In a bowl, mix the grated kohlrabi, oats, onion, garlic, soy sauce, spices, salt, pepper, and the prepared flax egg (ground flaxseed mixed with water and set aside for 5 minutes).
Shape the mixture into 4 patties and let them rest for 5-10 minutes.
Cook the Patties: Heat olive oil in a skillet over medium heat and fry the patties for about 4-5 minutes per side until golden and cooked through.
Assemble the Burgers: Toast the burger buns lightly.
Spread vegan mayo on the buns, then layer with lettuce, kohlrabi patty, tomato slices, cucumber or pickles, and red onion rings.
Serve: Serve the kohlrabi burgers hot with a generous side of sweet potato fries.
