Ingredients
  

For the Kohlrabi Burger Patties:

  • 2 medium kohlrabi bulbs peeled and grated
  • 100 g rolled oats
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • 1 tbsp ground flaxseed + 2.5 tablespoons water flax egg
  • 1 tbsp soy sauce or tamari
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil for frying

For the Burger Assembly:

  • 4 burger buns vegan
  • Lettuce leaves
  • Sliced tomato
  • Sliced cucumber or pickles
  • Red onion rings
  • Vegan mayo or sauce of choice

For the Sweet Potato Fries:

  • 2 large sweet potatoes cut into fries
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions
 

  • Prepare the Sweet Potato Fries: Preheat oven to 220°C (425°F).
  • Toss the sweet potato fries with olive oil, smoked paprika, garlic powder, salt, and pepper.
  • Spread on a lined baking sheet and bake for 25-30 minutes, flipping halfway, until golden and crispy.
  • Make the Kohlrabi Patties: Grate the kohlrabi and squeeze out excess liquid using a clean towel.
  • In a bowl, mix the grated kohlrabi, oats, onion, garlic, soy sauce, spices, salt, pepper, and the prepared flax egg (ground flaxseed mixed with water and set aside for 5 minutes).
  • Shape the mixture into 4 patties and let them rest for 5-10 minutes.
  • Cook the Patties: Heat olive oil in a skillet over medium heat and fry the patties for about 4-5 minutes per side until golden and cooked through.
  • Assemble the Burgers: Toast the burger buns lightly.
  • Spread vegan mayo on the buns, then layer with lettuce, kohlrabi patty, tomato slices, cucumber or pickles, and red onion rings.
  • Serve: Serve the kohlrabi burgers hot with a generous side of sweet potato fries.

Notes

  • For extra crispiness, you can coat the patties in breadcrumbs before frying.
  • Swap the vegan mayo for avocado mash or a spicy vegan aioli for variation.
  • The patties can also be baked at 200°C (400°F) for about 20 minutes if you prefer less oil.
  • You can make the patties ahead and store them in the fridge for up to 2 days before frying.
Tip: These burgers taste fantastic served with a side of homemade coleslaw or a simple mixed greens salad for a complete meal.
