Ingredients
  

For the Eggplant:

  • 1 medium eggplant sliced into rounds
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Sumac Onions:

  • 1 small red onion thinly sliced
  • 1 tbsp lemon juice
  • 1 tsp sumac
  • Pinch of salt

For Assembly:

  • 2 flatbreads store-bought or homemade
  • 2 tbsp tahini
  • 1 tbsp water to thin tahini, if needed
  • 2 tsp za’atar spice blend
  • 2 tbsp pomegranate seeds
  • Fresh parsley chopped (optional)

Instructions
 

Prepare the Eggplant

  • Preheat oven to 200°C (400°F).
  • Toss the eggplant slices with olive oil, minced garlic, salt, and pepper.
  • Spread on a lined baking sheet and roast for 25–30 minutes, flipping halfway, until golden and tender.

Marinate the Sumac Onions

  • In a small bowl, toss the sliced onions with lemon juice, sumac, and a pinch of salt.
  • Let them marinate while the eggplant roasts to soften and become tangy.

Grill the Flatbreads

  • Warm or grill the flatbreads briefly on a pan or grill until slightly charred and pliable.

Assemble the Flatbread

  • Spread a light drizzle of tahini over each flatbread.
  • Arrange the roasted eggplant slices on top.
  • Scatter the marinated onions and sprinkle generously with za’atar.
  • Garnish with pomegranate seeds and fresh parsley if desired.

Serve

  • Slice into wedges and serve warm or at room temperature.

  • Add a few slices of roasted red pepper for extra sweetness and color.
  • Swap tahini for vegan yogurt if you want a lighter, creamier topping.
