Ingredients
  

For the Corn Fritters:

  • 1 cup fresh or frozen corn kernels thawed if frozen
  • ½ cup grated cheddar or vegan cheese
  • ¼ cup finely chopped spring onions
  • ½ cup all-purpose flour
  • ¼ tsp baking powder
  • 1 large egg or vegan egg substitute
  • ¼ cup milk or plant-based milk
  • Salt & black pepper to taste
  • Neutral oil for frying

For the Hot Honey:

  • ¼ cup honey or agave for vegan
  • ½ tsp red chili flakes adjust to taste
  • Pinch of sea salt

Instructions
 

Make the Hot Honey:

  • In a small saucepan, gently heat the honey (or agave) with chili flakes and salt. Do not boil. Let infuse for 5–10 minutes, then set aside to cool.

Mix the Fritter Batter:

  • In a large bowl, combine flour, baking powder, salt, and pepper. Stir in corn, cheese, and spring onions.
  • In a separate bowl, whisk the egg and milk, then add to the dry ingredients. Mix until just combined.

Fry the Fritters:

  • Heat oil in a skillet over medium heat. Drop spoonfuls of batter into the pan and flatten slightly.
  • Fry for 2–3 minutes per side or until golden and crisp. Drain on paper towels.

Serve:

  • Plate the fritters warm and drizzle generously with hot honey. Garnish with extra spring onions or chili flakes, if desired.

Notes

  • Use smoked paprika or chipotle powder in the batter for a deeper flavor.
  • Can be made gluten-free with a 1:1 GF flour blend.
  • Store leftovers in the fridge and reheat in a hot pan for crispiness.
