  • 4 cups fresh cherries pitted
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 cup agave syrup or to taste
  • 1 cup water

  • Prepare the Cherries: Pit the fresh cherries and place them in a blender or food processor.
  • Blend the Ingredients: Add the lemon juice, agave syrup, and water to the blender with the cherries.
  • Blend until smooth and fully combined. Taste the mixture and adjust the sweetness by adding more agave syrup if needed.
  • Strain the Mixture: Pour the blended mixture through a fine mesh sieve into a large bowl, pressing down with a spoon to extract as much liquid as possible. This step is optional but will result in a smoother sorbet.
  • Chill the Mixture: Cover the bowl and refrigerate the mixture for at least 2 hours, or until thoroughly chilled.
  • Freeze the Sorbet: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
  • Transfer the sorbet to an airtight container and freeze for an additional 2-4 hours, or until firm.
  • Serve: Scoop the sorbet into bowls or cones and serve immediately. Garnish with fresh cherries or a lemon slice if desired.
