Ingredients
  

  • 2 slices of thick bread brioche, sourdough, or vegan alternative
  • 1 egg or 1 tbsp cornstarch + 2 tbsp plant milk for vegan version
  • 3 tbsp plain yogurt or vegan yogurt
  • 1 tsp maple syrup or sugar
  • ¼ tsp vanilla extract
  • Toppings: berries banana slices, apple, chocolate chips, or powdered sugar

Instructions
 

Preheat Oven:

  • Preheat to 190°C (375°F), or use an air fryer at 180°C (355°F).

Make the Custard:

  • In a bowl, whisk together yogurt, egg (or starch + plant milk), maple syrup, and vanilla until smooth.

Prepare Bread:

  • Press the center of each bread slice with the back of a spoon to create a well. Place slices on a lined baking tray or in the air fryer basket.

Fill & Top:

  • Spoon the custard into the center of each slice. Add fruit or chocolate chips on top.

Bake:

  • Bake for 10–12 minutes, or until the edges are golden and the custard is set.

Serve:

  • Sprinkle with powdered sugar if desired. Serve warm.

Notes

  • For extra flavor, add a pinch of cinnamon or lemon zest to the custard mix.
  • Vegan custard works best with thick soy or coconut yogurt.
  • Air fryers make the toast ultra crispy — perfect if you're short on time.
