Ingredients
  

  • 1 cup fresh raspberries
  • 8-10 fresh thyme sprigs
  • 4 ounces gin
  • 1/4 cup lemon juice about 2 lemons
  • 2 tbsp simple syrup or to taste
  • Soda water
  • Ice cubes
  • Raspberries and thyme sprigs for garnish (optional)

Instructions
 

  • Muddle the Raspberries and Thyme: In a large pitcher or cocktail shaker, add the fresh raspberries and thyme sprigs. Muddle them together to release the juices and flavors.
  • Add the Gin, Lemon Juice, and Simple Syrup: Pour in the gin, lemon juice, and simple syrup. Stir or shake well to combine.
  • Fill Glasses: Fill four glasses with ice cubes. Strain the raspberry thyme gin mixture evenly into each glass, filling them about 2/3 full.
  • Top with Soda Water: Top each glass with soda water to fill. Stir gently to combine.
  • Garnish and Serve: Garnish with additional raspberries and thyme sprigs if desired. Serve immediately.
