  • 1 lb 450g elbow macaroni or any pasta of choice
  • Pumpkin Cheese Sauce:
  • 2 cups 475 ml pure pumpkin puree (not pumpkin pie filling)
  • 2 cups 475 ml milk
  • 2 cups 220g shredded sharp cheddar cheese
  • 1 cup 100g grated Parmesan cheese
  • 3 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp nutmeg optional

Breadcrumb Topping:

  • 1 cup 100g breadcrumbs
  • 2 tbsp melted butter
  • 1/2 cup 50g grated Parmesan cheese
  • 1/4 tsp paprika optional

Instructions
 

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, about 8 minutes. Drain and set aside.
  • Make the Pumpkin Cheese Sauce: In a large pot, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it forms a light roux.
  • Gradually whisk in the milk, ensuring there are no lumps. Bring to a simmer, then reduce the heat.
