Ingredients
  

For the Rice Pudding:

  • 1/2 cup Arborio rice or any short-grain rice
  • 1 cup water
  • 1 cup coconut milk full-fat for extra creaminess
  • 1/4 cup sugar adjust to taste
  • 1/4 tsp ground cardamom
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract

For the Peaches:

  • 2 ripe peaches peeled, pitted, and diced
  • 1 tbsp sugar
  • 1/4 tsp ground cinnamon optional

Instructions
 

  • Cook the Rice: In a medium saucepan, combine the rice and water. Bring to a boil over medium heat, then reduce the heat to low, cover, and simmer for 10-15 minutes, or until the rice is tender and the water is absorbed.
  • Prepare the Coconut Mixture: In another saucepan, mix the coconut milk, sugar, ground cardamom, and salt. Heat over medium heat, stirring occasionally, until the sugar dissolves and the mixture is warm.
  • Combine the Rice and Coconut Mixture: Once the rice is cooked, stir it into the warm coconut mixture. Continue to cook over low heat, stirring frequently, for about 10-15 minutes, or until the pudding is creamy and thickened.
  • Prepare the Peaches: While the pudding cooks, toss the diced peaches with sugar and cinnamon (if using) in a small bowl. Set aside to macerate for a few minutes.
  • Assemble and Serve: Spoon the warm rice pudding into bowls and top with the macerated peaches. The pudding can also be chilled in the refrigerator for 1-2 hours if a cold dessert is preferred.
