Ingredients
  

For the Sauce:

  • 2 tbsp soy sauce
  • 2 cloves garlic minced
  • 1 tbsp chili crisp or chili flakes
  • 1 ½ tbsp peanut butter or tahini
  • 1 tbsp maple syrup or agave
  • 1 tsp toasted sesame oil

For the Bowl:

  • 150 g ramen noodles vegan-friendly
  • 150 g firm tofu cubed
  • 1 tbsp cornstarch for coating tofu
  • 1 tbsp neutral oil for frying
  • 2 small bok choy halved or quartered
  • 1 small carrot optional, julienned

Garnish:

  • 1 tbsp sesame seeds
  • 2 scallions thinly sliced
  • Extra chili flakes or chili oil

Instructions
 

Step 1: Prep Tofu

  • Toss tofu cubes in cornstarch.
  • Heat oil in a pan and fry until golden and crispy. Remove and set aside.

Step 2: Cook Noodles & Veggies

  • Boil ramen noodles until al dente, drain, and reserve a little cooking water.
  • Quickly sauté bok choy (and carrot, if using) in the same pan for 2–3 minutes.

Step 3: Make Sauce

  • In a bowl, whisk together soy sauce, garlic, chili, peanut butter, maple syrup, and sesame oil.
  • Add a splash of hot noodle water to loosen into a glossy sauce.

Step 4: Combine & Serve

  • Toss noodles in the sauce until well coated.
  • Add crispy tofu and bok choy on top.
  • Garnish with sesame seeds, scallions, and extra chili.
