Ingredients
  

  • 1 medium courgette zucchini, shaved into thin ribbons
  • 1 cup fresh cherries pitted and halved
  • 2 tbsp olive oil
  • 1 tbsp lemon juice or white balsamic vinegar
  • 1 tsp maple syrup optional, for balance
  • ½ tsp Dijon mustard
  • Salt and pepper to taste
  • Fresh herbs: mint basil, or parsley, to garnish
  • Optional toppings: toasted pumpkin seeds sunflower seeds, or chopped pistachios

Instructions
 

Prep the Courgette:

  • Use a vegetable peeler or mandoline to slice the courgette into thin ribbons.

Make the Dressing:

  • In a small bowl, whisk together olive oil, lemon juice or vinegar, maple syrup (if using), mustard, salt, and pepper.

Toss & Combine:

  • In a shallow ceramic dish, gently toss courgette ribbons and cherry halves with the dressing until evenly coated.

Garnish & Serve:

  • Top with fresh herbs and optional seeds or nuts for texture. Serve immediately as a starter or side dish.

Notes

  • Use yellow and green courgettes for added color.
  • Swap cherries with pomegranate seeds or strawberries if out of season.
  • Pairs beautifully with grilled tofu or crusty bread.
