Ingredients

  • 1 cup canned pumpkin puree not pumpkin pie filling
  • 1 can 15 oz chickpeas, drained and rinsed
  • 2 cloves garlic minced
  • 2 tbsp tahini
  • 2 tbsp olive oil
  • 1 lemon juiced (about 2 tablespoons)
  • 1/2 tsp ground cinnamon
  • 1/2 tsp cumin
  • Salt to taste
  • Optional for garnish: a sprinkle of paprika pumpkin seeds, and a drizzle of olive oil

Instructions

  • Blend the Base: In a food processor, combine the pumpkin puree, chickpeas, garlic, tahini, olive oil, and lemon juice. Blend until smooth.
  • Season: Add the cinnamon, cumin, and salt to the blended mixture. Pulse the food processor a few more times to mix the spices evenly throughout the hummus.
  • Adjust Consistency: If the hummus is too thick, add a little water or additional olive oil to reach your desired consistency. Pulse again to incorporate.
  • Taste and Finalize: Taste your hummus and adjust the seasoning if necessary. Some might prefer it a bit tangier (add more lemon juice), saltier, or with more garlic.
  • Serve: Transfer the hummus to a serving bowl. Consider garnishing with a sprinkle of paprika, a few pumpkin seeds, and a light drizzle of olive oil for an extra touch of flavor and presentation.
  • Enjoy: Serve your pumpkin hummus with a selection of dippers such as pita bread, carrot sticks, celery, or cucumber slices.

Notes

As a Spread: Pumpkin hummus makes an excellent spread on sandwiches or wraps, adding a seasonal twist.
With Salads: Dollop it on top of a mixed green salad for added flavor and texture.
As a Dip: Perfect for parties, serve it as a dip with crackers, toasted pita, or fresh veggies.
This pumpkin hummus recipe combines the traditional elements of chickpeas and tahini with the seasonal flair of pumpkin and a hint of cinnamon, making it a delightful and healthy choice for any occasion!
