  • 2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 cup plant-based minced meat optional
  • Fresh cilantro chopped (for garnish)
  • Avocado slices for garnish

Instructions
 

  • Prepare Ingredients: Heat the olive oil in a large pot over medium heat. Add the onion and garlic, sautéing until they are soft and fragrant.
  • Cook Vegetables: Stir in the bell peppers, carrots, and zucchini. Cook until the vegetables are just tender.
  • Simmer the Chili: Add the vegetable broth, black beans, kidney beans, diced tomatoes, and corn. Bring to a boil, then reduce heat to low.
