Ingredients
  

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup vegan butter chilled and cubed
  • 1/4 cup ice water
  • 1/4 tsp salt

For the Almond Cream Filling:

  • 1 cup almond flour
  • 1/4 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 cup vegan butter softened
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract

For the Topping:

  • 3-4 ripe peaches thinly sliced
  • 2 tbsp sliced almonds
  • 2 tbsp apricot jam optional, for glaze

Instructions
 

  • Prepare the Crust: In a large bowl, combine the flour and salt. Cut in the vegan butter until the mixture resembles coarse crumbs.
  • Gradually add ice water, one tablespoon at a time, until the dough comes together.
  • Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  • Make the Almond Cream Filling: In a medium bowl, cream together the vegan butter and powdered sugar until light and fluffy.
  • Mix in the almond flour, all-purpose flour, almond milk, vanilla extract, and almond extract until smooth. Set aside.
  • Assemble the Tart: Preheat the oven to 375°F (190°C).
  • On a lightly floured surface, roll out the chilled dough to fit a 9-inch tart pan. Press the dough into the pan and trim any excess.
  • Spread the almond cream filling evenly over the crust.
  • Arrange the peach slices in a circular pattern over the filling. Sprinkle with sliced almonds.
  • Bake: Bake the tart for 35-40 minutes, or until the crust is golden brown and the peaches are tender.
  • If desired, warm the apricot jam and brush it over the top of the tart for a glossy finish.
  • Serve: Allow the tart to cool slightly before slicing. Serve warm or chilled.
