Ingredients
  

  • 1 large head of cauliflower cut into florets
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 tbsp fresh ginger minced
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 4 cups vegetable broth
  • 1 can 14 oz coconut milk
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions
 

  • Roast the Cauliflower: Preheat your oven to 400°F (200°C). Toss cauliflower florets with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes, until golden and tender.
  • Sauté Aromatics: While the cauliflower roasts, heat a large pot over medium heat. Add more olive oil, diced onion, garlic, and ginger, cooking until the onion becomes translucent.
  • Spice It Up: Stir in the curry powder and turmeric, cooking for about 1 minute until fragrant.
  • Simmer the Soup: Add the roasted cauliflower to the pot along with the vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Blend the Soup: Use an immersion blender to puree the soup until smooth. Stir in the coconut milk and continue to heat until the soup is warm.
  • Add Final Touches: Stir in lime juice and adjust seasoning with salt and pepper to taste.
  • Serve: Ladle the soup into bowls and garnish with fresh cilantro. Serve hot.
