  • 1 cup pitted dates
  • 1/2 cup unsweetened shredded coconut plus extra for rolling
  • 1/4 cup cocoa powder
  • 1/4 cup almond butter or any nut butter of choice
  • 1 tbsp chia seeds optional
  • 1 tsp vanilla extract
  • A pinch of salt

  • Prep the Dates: Soak the pitted dates in warm water for 10 minutes to soften them, then drain.

  • Coat with Coconut: Roll each ball in the extra shredded coconut to coat the outside.
